What deionized water (DI) is

Deionized water is ordinary water run through a deionization process that strips out the dissolved minerals, calcium, magnesium, sodium, and other impurities that everyday water carries. What's left is water so pure that when it dries, it leaves nothing behind. That's exactly why it's nicknamed "spot-free water": no minerals means no mineral spots on the paint.

The problem with regular tap water

Tap water is full of dissolved minerals, what people call "hard water", and Southern California's water is notably hard. That's a problem the moment water starts to dry on paint.
